Boost your memory by eating a mixed berry rich dessert filled with antioxidants
Blueberries, raspberries and strawberries should be included in one’s diet to aid in fighting inflammation, and pain while boosting your memory. These three fruits are extremely high in fiber and low in calories. Below is an easy to bake scrumptious dessert that will keep your memory sharp and your body healthy.
Berry Berry Crisp
Filling:
4 cups mixed blueberries, raspberries and strawberries
1/2 cup sugar
2 tbsp. tapioca
1 tsp. fresh lime juice
Topping:
1/3 cup walnuts
1/4 cup butter, cut in small pieces
1/2 cup all purpose flour (unbleached)
1/3 cup sugar
1/8 tsp. baking powder
pinch of salt
Preheat oven to 375 degrees and lightly coat a 9 x 9 inch baking pan with cooking spray.
Place the mixed berries in a bowl and add the sugar, tapioca and lime juice. Spoon into baking pan.
Place walnuts, butter, flour, sugar, baking powder and salt into a food processor and pulse until the walnuts are chopped and the mixture has a crumbly texture. Spoon the topping over the fruit and bake 35-40 minutes until bubbly.
This delicious dessert serves 8-10.
